Diskarteng Tamad: Sinigang na Baboy

Pork, cut into big cubes (preferably liempo, or country ribs)
tamarind soup base powder
onions
tomatoes
garlic
patis/salt (again, whichever you prefer)
optional: siling labuyo; siling berde; talong; radish; gabi
kangkong (if not available, spinach will do)
- plonk pork, onions, tomatoes, and garlic in the pot 
- add patis, then boil

Diskarteng Tamad – Daing na Bangus

Version 1:
bangus – daing cut
vinegar
salt/patis
garlic
ground pepper
- mix the seasonings in a separate bowl
- pour over the bangus
- cook the bangus in the mixture until it dries out
- remove the bangus and pour in some cooking oil
- heat until smoking hot (para crispy ang balat, devah?)
- slide in the bangus carefully
